After all, isn’t it our chocolate chip oat muffins that we turn to when our sweet tooth hits on a particularly long afternoon? These fluffy pastries are sure to scratch that itch for you as well!
But we don’t just love chocolate chip oat muffins when we’re feeling peckish. Whenever we’re invited somewhere, we like to bring a tray of them as a gift. The muffins look temptingly delicious at a potluck or book club meeting. When the weather gets good enough too, these bad boys hit the picnic blanket and backyard just as fine too. We’re sure your friends and guests will agree as well!
The batter for the chocolate chip oat muffins is, as is so often the case, quickly mixed. Our recipe does away with any complicated ingredients, this really is a celebration of sweet simplicity, quite literally! In addition to baking classics like eggs, milk, and flour, we also use Greek yogurt and chocolate chips to add an extra layer of depth to the recipe.
Once you’ve mixed everything together, pour the batter into a muffin tin and pop it into the oven. Call us old-fashioned, but we personally prefer using muffin trays for a few reasons. First, they’re much easier to transport than their disposable counterparts. And of course, there’s the sustainability factor of it all. CHOCOLATE CHIP OAT MUFFINS

INGREDIENTS
- 2 ⅔ cups flour
- 1 ⅔ cups rolled oats
- 1 tbsp cornstarch
- 1 ½ tsp baking powder
- 1 tsp baking soda
- A pinch of salt
- 2 eggs
- ½ cup Greek yogurt
- ⅔ cups vegetable oil, or your preferred neutral oil
- ½ cup milk
- 1 ½ cups light brown sugar
- 1 tbsp vanilla extract
- 1 cup chocolate chips
INSTRUCTIONS
- Preheat the oven to 375 °F.
- Combine flour, oats, cornstarch, baking powder, baking soda, and salt.
- In a separate bowl, mix together the eggs, Greek yogurt, vegetable oil, milk, light brown sugar, and vanilla extract.
- Add the dry ingredients and mix until just combined, being careful not to overmix.
- Fold in the chocolate chips.
- Divide the batter evenly among the cups of a greased muffin pan or 12 muffin cups and bake for 15-20 minutes.
