How to Make Grilled Feta Pockets
Feta is a true all-rounder. It tastes great both warm and cold, and you can bake it, fry it, or even puree it. It also harmonizes well with so many different flavors. From savory herbs like oregano and thyme to sweet friends like honey and watermelon to spicy ingredients like chili, srirarcha and the like. While feta cheese originally comes from Greece, it’s now a staple in kitchens worldwide. Although we may be most used to enjoying the milder cow’s milk-based feta, sheep and goat varieites also exist and can be found at specialty super markets. Whichever feta you’re bringing to the table, they will all work well!
For the grilled feta pockets, you’ll need parchment paper or aluminum foil and an ovenproof dish. In addition to the feta, you’ll also need tomatoes, herbs like thyme, garlic, some oil, honey, salt, and pepper. Of course, you can vary and refine the pockets according to your personal taste. Bell peppers and zucchini work just as well as tomatoes, for example. And the choice of herbs can be mixed and matched as you so desire.
Line the dishes with parchment paper or foil and place the feta in them. Add the remaining ingredients and loosely seal the pockets. Grill for 8-10 minutes on the grill, and be mindful to let them cool so slightly before enjoying!

GRILLED FETA POCKETS
INGREDIENTS
- 2 cloves garlic
- 1 tbsp thyme or other herbs of your choice
- 1 cup cherry tomatoes
- 14 oz feta
- 2 tbsp oil
- ¼ cup honey
- salt and pepper, to taste
INSTRUCTIONS
- Peel the garlic and crush it with the back of a knife.
- Wash the thyme and shake dry. Wash the tomatoes.
- Line an oven-safe dish with aluminum foil or parchment paper. Place the feta in the dish. Spread the garlic, thyme, and tomatoes evenly over the cheese. Drizzle with a little olive oil and honey. Season with salt and pepper to taste.
- Loosely fold the foil or parchment to form sealed pockets around the feta and toppings.
- Place the pockets on the grill and cook for 8–10 minutes. Cool slightly before serving.
