INGREDIENTS
- 1 apple
- 6 tbsp butter (¾ stick), softened
- ½ cup sugar
- 1 egg
- ¾ cups rolled oats
- ½ cup all-purpose flour
- 1 tsp baking powder
- 1 pinch salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ cup walnuts, chopped
INSTRUCTIONS
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Peel, core, and dice the apple into small cubes.
- In a large bowl, cream together the butter and sugar.
- Add the egg and mix well.
- Add rolled oats, flour, baking powder, salt, cinnamon, and vanilla extract.
- Fold in the chopped walnuts and apple cubes.
- Form the dough into small balls, space them evenly on the baking sheet. Gently flatten each one.
- Bake for 12-15 minutes, or until golden brown.
