You can prepare our feta and spinach pasta bake easily with just a handful of ingredients. Though, over here at Scrumdiddlyumptious, we are never to say no to creativity. If you’d like to add few more veggies here, a dollop of cheese there, we won’t say anything. It’s best to let your heart and stomach lead in such matters!

There is a trick however to this otherwise undemanding recipe. To really nail the pasta bake’s creamy sauce make sure to reserve some of your pasta water to mix in with the cream cheese and feta. The pasta water retains some of the noodle’s starch, meaning it will both thin out the sauce and help it bind. The bake’s cream sauce will then be further refined with sautéed onions and garlic to add depth to its taste. Afterwards, simply to season with salt and pepper to your heart’s content.

Before your dish goes in the oven, make sure to seal the deal and sprinkle some grated cheese over it. Now things are getting serious (and hot!), the feta and spinach pasta bake will certainly announce its readiness from the oven. FETA & SPINACH PASTA BAKE

INGREDIENTS

  • 14 oz frozen spinach
  • ¼ cup vegetable broth
  • 14 oz pasta
  • Salt & pepper, to taste
  • 1 large onion
  • 2 cloves garlic
  • Oil (for cooking and greasing)
  • 7 oz (vegan) cream cheese
  • 7 oz (vegan) feta
  • 1 cup (vegan) shredded cheese (e.g., Parmesan)

INSTRUCTIONS

  1. In a pot, let the spinach simmer in the vegetable broth for about 10 minutes.
  2. Meanwhile, cook the pasta in a pot of salted water. Reduce the recommended cooking time by about 5 minutes. Save the pasta water when draining.
  3. Peel and chop the onion and garlic. Using a large pan, sauté both in oil.
  4. Add about ¾ cup of pasta water and stir in the cream cheese.
  5. Crumble in the feta and stir until it has fully dissolved.
  6. Stir in the spinach and season the sauce with salt and pepper to taste.
  7. Pour the noodles into a greased baking dish and top with the sauce. Sprinkle with the shredded cheese and bake at 350°F for 25-30 minutes.
