Macaroni Casserole with Eggplant and Ham

Ingredients
  

  • 1 eggplant
  • 10 oz cooked long macaroni
  • 12 slices ham
  • 6 eggs
  • 1 cup cream
  • 2/3 cup parsley
  • 1 clove garlic, chopped
  • 1 1/4 cups grated mozzarella
  • salt and pepper

Instructions
 

  • Cut the eggplant into thick slices and sprinkle with salt.
  • Place the cooked macaroni in three layers in a bread pan, followed by a layer of eggplant. Tightly roll up the ham slices and create a layer on top of the eggplant. Repeat the whole layering process, ending with a layer of macaroni at the very top of the pan.
  • In a bowl, mix the eggs, cream, parsley, garlic, and salt and pepper. Pour the mixture over the macaroni and finally, sprinkle the mozzarella cheese over the top.
  • Bake for one hour at 320°F.
