Turkey-Mango Skewers

  • Wooden Skewers (available online, e.g., here)

Ingredients
  

  • 1 mango
  • 1 tbsp fresh parsley chopped
  • 1.3 lb turkey cutlets
  • 4 sliced ham slices
  • 2 tbsp oil
  • salt & pepper

Instructions
 

  • Peel the mango and cut the flesh from the pit. Slice about half into thin slices.
  • Soak the skewers in water.
  • Wash the parsley, pluck the leaves from the stems, and chop roughly.
  • Place the turkey cutlets between sheets of plastic wrap and pound them flat.
  • Top each turkey cutlet with 1 slice of cooked ham, a few mango slices, and some parsley.
  • Roll them up and cut them into 3-4 small rolls.
  • Drain the skewers and thread the turkey rolls onto them.
  • Drizzle with oil, salt, and pepper.
  • Grill the turkey-mango skewers for 10-12 minutes over high heat.

Notes

You can make a dip from the remaining mango flesh, ¾ cup sour cream, some lemon juice, and 1 teaspoon of curry powder. Purée the mango flesh and mix it with the sour cream. Season the dip with lemon juice, salt, pepper, and curry.
