Summer is zucchini time, meaning that it will thankfully fill the produce aisle. For those who are home gardening, it also often means having more zucchini than you know what to do with. It’s important to have the right recipes on hand to process the abundant harvest quickly. It’s with this in mind that we created our zucchini ketchup recipe, which not only calls for a proper bounty of zucchinis but is so versatile too. Perfect, right?

Easy Homemade Zucchini Ketchup

If zucchini sits in the garden bed for too long, they lose their signature flavor and crispness. Since you and your friends have probably had enough of the green fruits by then, zucchini ketchup is a great option to make sure your harvest doesn’t go to waste. Our ketchup will even keep for up to a year when unopened. Once opened, it will stay fresh in the refrigerator for about two weeks. So with this recipe, you’ll be avoiding food-waste and making yourself a remarkable summer souvenir! What a win-win!

Another advantage of this ketchup is that you know exactly what’s in it. This way you can avoid the unnecessary additives and preservatives that are unfortunately common in mass-produced ketchups.

Besides zucchini, the recipe includes red onions, garlic, vinegar, sugar, and tomato paste. It’s refined with chili peppers, curry powder, paprika, and a little mustard for extra flavor and heat. To make this ketchup, you need to simmer the zucchini and onions for about 30 minutes until tend. Afterwards, you’ll purée the mix and season it up to your liking. For a litle extra of literal fineness, you can strain the zucchini ketchup through a sieve to get a particularly smooth texture.

Zucchini Ketchup

Equipment

  • 6 Bottles (at least 20 oz/600 ml)

Ingredients
  

  • 9-10 cups zucchini
  • 4 cups red onions
  • 1 garlic cloves or more, to taste
  • 2 tbsp salt
  • 1 cup brown sugar
  • 1 cup vinegar
  • 2 chili peppers
  • 1 tbsp curry powder
  • 2 tbsp sweet paprika
  • 2 tbsp mustard
  • ¾ cup tomato paste or more, to taste

Instructions
 

  • Peel the zucchini, then dice or finely grate it. Peel and dice the red onions and garlic.
  • In a large bowl, combine zucchini, onions, garlic,. Add 2 tablespoons of salt, mix well and let it sit for about three hours.
  • Wash the chili peppers and chop into small pieces. In a pot, bring the peppers, sugar, and vinegar to a boil.
  • Now add the remaining ingredients and let everything simmer for 30 minutes. Stir occasionally.
  • Using an immersion blender, purée until smooth. Continue simmering until the sauce has reduced to your desired thickness.
  • Taste and season with additional vinegar and spices if needed.
  • Pour your zucchini ketchup into sterilized jars or bottles.
